成份：其主要成份为Ι氰定酰基葡萄糖苷、Д甲基花青素酰基葡萄糖苷。
Element ：Mainly contain cyanide Ι set-glucoside, Д Procyanidins methylation-glucoside.
用途：天然食用色素，用于各种食品及饮料的着色。

2、易溶于水及乙醇水溶液，不溶于油脂、无水乙醇。有良好的抗氧化性。水溶液红至紫红色
Soluble in water and aqueous solution of ethanol, not soluble in fats, alcohol。There is a good antioxidant. Red to purple-red solution。
3、其色调及稳定性受PH影响：酸性时呈稳定的红色或紫红色；中性时呈蓝色；碱性时呈不稳定的绿色。
